Part of learning a yoga practice is about learning patience. You move slowly and deliberately, you breathe slowly, you don’t rush. For us baby boomers, that is a nice change from exercise like aerobics, for instance. “Yoga is not about judgment,” the instructor often says. You learn to do your best and not judge yourself or others for how well they do. Today, I got a real lesson in what non-judgment is all about.

I go to yoga class at the local YMCA twice a week and it’s always crowded. I wish they would add more classes but so far, it’s only Monday and Wednesday. You have to go early or you end up squeezed into a small spot with your feet in someone else’s face - and someone’s feet in your face. I always go in early so I don’t have to fight for a spot but there are always stragglers who come in and disrupt things after we’re well into our deep breathing. Since I figure yoga is the place to learn to be patient with others, as well as myself, I usually try not to get irritated with them.

Today, though, we were doing our beginning breathing and a woman came in. She stopped and looked around and asked the teacher if there was a wall she could sit by to do her yoga. The instructor was very nice and a place was found. I thought to myself, “Well, if you’d come on time, you’d have had a spot on any wall here.”

As she settled in, the woman in front of me offered to trade places with her. The latecomer said “Thanks so much. I have MS and I have to have a wall in case I fall over.”

I guess we all need lessons sometimes in not passing judgment on people and we need to remember to count our own blessings. I’m nearly 60 years old, a senior by many people’s standards, and I’m at a time in life when many people have multiple health problems. Here I am though, sitting in yoga class, probably healthier than I was when I was 30. The late comer to yoga class with MS was probably in her 30’s.

I have to commend her for being there, for doing what she can to be proactive in helping her body overcome a terrible disease like MS. I have to remember too that you never know what someone else’s story is and it’s always better to think kind thoughts and give people the benefit of the doubt.

So, for me yoga class isn’t just about learning how to do a better down dog or proving to myself that I really CAN stretch my body into all those pretzel poses - well, I’m getting there anyway. Yoga is part of the journey that is teaching me to travel through life more slowly to savor each moment, to be grateful for what I have, and not pass judgment on others - or myself. The older I get, the more important this lesson seems.

Grandma’s Coconut Cake Recipe

My Danish grandmother was a terrific cook up until her death at the age of 98. This 3 layer coconut cake recipe was one of her specialties for birthdays or holidays and it is delicious! It’s also large enough for a crowd.

Ingredients to Coconut Cake

1 yellow cake mix
1 package 4 oz instant pudding mix vanilla
1 1/3 c water
4 eggs
1/4 c oil
2 c coconut
1 c nuts

Directions for Coconut Cake

Mix all ingredients except coconut and nuts in mixing bowl. Beat for 4 minutes.

Add coconut and nuts and mix well.

Pour batter into 3 round, greased and floured 9 inch cake pans.

Bake at 350 degrees for 35 minutes.

Coconut Cake Frosting

Ingredients

4 tsp margarine
1 8 oz package cream cheese
2 tsp milk
3 1/2 c powdered sugar
1/2 tsp vanilla
2 c coconut

Directions

Melt 2 tbs margarine in skillet. Add 1 cup coconut, stirring constantly. Cook until coconut turns golden brown.

Spread coconut on paper towel to cool.

Cream 2 tbs butter and softened cream cheese in a medium mixing bowl.

Add milk and beat in sugar. Beat until sugar is dissolved. Blend in vanilla.

Spread frosting mix on top of cake layers and stack. Frost sides of cake.

Sprinkle toasted coconut on top.

Healthy Breakfast Recipe - Ham & Swiss Omelet Roll

This high protein breakfast omelet roll recipe contains a whopping 21 grams of protein and is a great weight loss recipe. Eating at least 10 - 15 grams of protein within 30 minutes of rising in the mornings helps balance your blood sugar and boost metabolism for the entire day.

The red pepper in this recipes also helps boost the metabolism and nutrient-rich spinach contains the same lean muscle building amino acids found in meat - but without the fat and calories. In fact, at 7 calories per cup, spinach is a dieter’s dream food.

This omelet roll recipes is made with egg substitute instead of whole eggs which greatly reduces the fat, calories, sodium and cholesterol.

By age 65, you need at least 1 gram of protein for each 2 pounds of body weight each day, so a 150 lb person needs at least 75 grams of protein a day to maintain muscle mass and overall health. Make sure your protein sources are lean, healthy sources such as an egg (6gms of protein), kidney beans (15gm of protein per cup) or cottage cheese (28gm per cup).


Ingredients for High Protein Omelet Roll

½ c all-purpose (plain) flour
1 c fat-free milk
1 tbs trans-free margarine
1 c egg substitute
1 c chopped smoked ham
1 small onion, chopped
¼ tsp ground red pepper
1 ½ c shredded reduced-fat Swiss cheese
1 small bunch fresh spinach, chopped, plus spinach leaves for garnish
Cooking spray

Directions for omelet roll recipe

Preheat oven to 350F.

Cover a jelly roll pan or cookie sheet with tin foil, then spray the foil with cooking spray.

Blend together milk, margarine and egg substitute in large mixing bowl. Add flour and ground pepper gradually, stirring continuously until mixture is smooth.

Pour the egg and flour mixture into the jelly roll pan. Sprinkle the top with chopped onion and ham.

Bake omelet roll for about 15 minutes or until eggs are well set.

Remove from the oven, sprinkle with cheese and spinach.

Beginning at one end, gently roll up baked egg mixture. Use foil for lifting and rolling.

Cut omelet roll into 6 equal servings and garnish with spinach leaves.

Makes 6 Servings

When you buy the sausage in bulk, it saves even more. This easy Italian Vegetable Soup recipe is a wonderful comfort food on those cold evenings.

This easy soup recipe can also be made in the crockpot. Just wait to add macaroni until the last 15 minutes.

Italian Vegetable Soup

Ingredients

1 lb bulk Italian Sausage
2 onions chopped
2 tsp minced garlic
1 oz beef soup recipe mix (Try Watkins soup mix to save even more on the food budget)
3 medium sliced carrots
2 15oz cans Italian stewed tomatoes
2 15 oz cans’ garbanzo beans or chickpeas-drained
1 cup elbow macaroni

Brown sausage and add onions and garlic to saute in a large pot.

Pour off the fat and add 4 cups of water, soup mix, carrots, tomatoes and garbanzo beans.

Bring these to a boil, reduce heat and simmer for 25 minutes.

Bring to a boil again and add elbow macaroni, cooking until macaroni is tender, about 10-15 minutes.
